Did you ever find a solution for a replacement? I also have a 16BH and like you, I’ve been carrying a separate 12V compressor fridge/freezer in my truck for the important food items. I only use the trailer fridge to chill drinks and other less perishable food items.

I used Dicor "self-leveling" Lap Sealant for anything on the roof (vents, fans, etc.). Make sure everything is clean & dry before you apply the sealant on.

I would check to see if your hot water heater tank is completely filled full with water. Because with a full tank boiled up, you should get more than 10-20 seconds out of it. I'm not an expert on this but I have resealed and done work on my trailer roof. I would say as long as your lap sealant is covering the area that got cut, you should be fine.
