For the information of others who may be interested. I found out that the coupler height is 20 inches.

Coupler height on 2017 21FB
We just purchased the AR1Maxx 21FB but haven't taken delivery yet. I want to do as much setup of my hitch as I can in advance. Does anyone know the height of the coupler on this model?
